Hi there,
So I bought a brand new phone for 900$ and it does not read DESfire cards...
It does not read Mifare Classic either. ICODE, same thing. Hitag, Hitag2, no chance.
It seems to only be used for interacting with another phone from the same brand/model... Pretty useless.
Now, my question is, what chips are considered to be part of the NFC familly?
Mifare Ultralight EV1
Mifare Ultralight C
Mifare Ultralight
Mifare Classic EV1 1K
Mifare Classic 1K
iCode SLIX
Legic MIM256
Legic ATC1024
Mifare DESfire EV1

It needs to be a NXP Chipset. If you have any of the newer Samsung phones your out of luck.
The cheap and very good Huawei Honor 8 works great.

While a few of the chips you outline can be used as NFC tags none of them are configured for it by default. You might want to look at ntag chips.
And yeah if you want to read any mifare you want to have the nxp chipset in your phone.

If you were to choose a NFC chip so that it is widely compatible with most smart phones, what would it be?
I have a JBL portable speaker with a Mifare Ultralight chip inside. It is used to quickly set up your phone's bluetooth settings so that it can communicate with it. (by the way, it also automatically turns ON the bluetooth...)

ntag 213. Unless you need more space, then ntag215 or 216. But it might depend on pricing in your area.

depends on what you want to put on the NFC chip.
a tinyurl or something else small - then i'd go with the ultralight (whichever is cheapest in your area).
a full VCard or something else large - then desfire ev1 (for more memory space)
but that is my preference only.
